Ingredients:
200g (7 oz) beef (sirloin, flank, or steak strips)
200g (7 oz) noodles (egg, udon, or ramen)
2 tbsp oil (vegetable or sesame)
1 large onion, thinly sliced
1 cup mushrooms, sliced (button, cremini, or shiitake)
2 cloves garlic, minced
1 tbsp soy sauce
1 tbsp oyster sauce
1 tsp brown sugar
1/2 tsp chili flakes (optional)
1 tsp cornstarch + 1 tbsp water (for thickening, optional)
Salt & pepper to taste
Green onions & sesame seeds for garnish (optional)
Instructions:
Cook the noodles:
Boil noodles according to package instructions. Drain and set aside.
Caramelize the onions:
In a large skillet, heat 1 tbsp oil over medium-low heat. Add onions and a pinch of salt. Cook slowly for 10–15 minutes, stirring occasionally, until golden and caramelized. Remove and set aside.
Sear the beef:
In the same skillet, heat remaining oil on high. Season beef with salt and pepper, then sear for 1–2 minutes per side until browned. Remove and set aside.
Sauté mushrooms & garlic:
Add mushrooms to the pan, cook until browned (about 5 minutes). Add garlic and cook 1 minute more.
Make the sauce:
Lower heat to medium. Add soy sauce, oyster sauce, brown sugar, and chili flakes. Stir in cornstarch slurry if you want it thicker.
Toss everything together:
Return beef and onions to the pan. Add cooked noodles and toss to coat well. Heat through for 1–2 minutes.
